Easy Carrot, Orange, and Olive Bread Soup (no kneading or leavening!)

The recipe consists of two parts. Hugo starts making olive bread. Later in the recipe you can read how to prepare carrot and orange soup.

Olive bread

  • Bread for 4 people
  • Preparation time: about 20 minutes + 30 minutes for baking

ingredients

  • 1 large red onion
  • 4 branches of thyme
  • Neutral oil
  • Salt and Pepper
  • 100 gr. passes
  • 50 gr. Pitted olives
  • 175 gr. Oatmeal or wheat flour
  • 3 teaspoons of baking powder
  • 1 No
  • 3 tablespoons of milk
  • 3 tablespoons pumpkin seeds, sunflower seeds, or pine nuts

Additional supplies: Baking tray with baking paper

How to prepare

Step 1: Preheat the oven to 210°C (top/bottom heat).

Step 2: Chop the onion, peel it, cut it into half rings, and chop the thyme.

Step 3: Heat an amount of oil in a frying pan and fry the onions with thyme until the onions soften. Season with salt and pepper and leave to cool slightly.

Step 4: Chop or break the cheese into pieces and roughly chop the olives.

Step 5: Using a wooden spoon, mix the flour, baking powder, a pinch of salt, feta cheese and fried onions in a bowl.

Step 6: Add the milk and eggs and mix until the ingredients are combined (no need to knead).

Step 7: Place the beans on a plate.

Step 8: We form a rectangular loaf of dough, carefully press the bottom part onto the grains, then place it in the baking tray.

Step 9: Slit the bread crosswise at the top (this will give you a nice crispy crust).

Step 10: Bake the bread for about 30 minutes.

advice: Use a food processor to grind the oatmeal into fine oatmeal, which is often cheaper than buying ready-made oatmeal.

How to prepare

Step 1: Peel the onion and garlic and chop them both finely.

Step 2: Heat the butter in a soup pan and fry the onions. Then add the garlic.

Step 3: Peel the carrots, cut them into slices or chunks, and chop the thyme.

Step 4: Add the carrots and thyme to the onions and sauté for a few minutes.

Step 5: Add smoked paprika powder. Season with salt and chili flakes.

Step 6: Add the orange juice and broth and simmer for 15 minutes.

Step 7: Add the cream and puree the soup. Rinse the beans and heat them in the soup.

Step 8: Finely chop the chives and add to the soup.
