Chef Sergio Herrmann exits the restaurants at Zeeland Cadzand | internal

Chef Sergio Hermann is leaving his two Cadzand restaurants after fifteen years. His restaurant organization mentioned this in a press release Thursday evening. According to Herrmann, the role he plays in the business no longer fits his personal ambition.

The news means that the concepts of Pure C and AIRrepublic in the port city of Zeeland are coming to an end. Hermann passes the responsibility on to the Strandhotel, a hotel in Cadzand with several gourmet restaurant concepts. Nothing is known yet about the new interpretation of the issues.

The Pure C lost two stars when introducing its Michelin stars in the Netherlands in April and went from two to zero. It is unclear if this influenced Hermann’s decision. He himself says that he “wants to continue to inspire” himself.

“After fifteen years I feel I am in danger of reintroducing myself. This is not in my nature in Zeeland. With this sheer passion for cooking, I also have other desires such as devoting more time to my family, children and friends, traveling more and taking the leap into unique international ventures such as Asia.

, in Antwerp, I am still strongly involved in Le Pristine and Blueness restaurants. There I develop my hospitality vision and we continue to work hard with our teams to create unique experiences for our guests. We’re just getting started here, so this job is still quite a challenge for me,” Herrmann continues.

The final round will take place at Pure C on the evening of Saturday, September 23, 2023, and at AIRrepublic, on the evening of Saturday, March 30, 2024.
