Polandfriedon (1/2)
The Spanish and Italian influences of the past are even more evident in the cuisine of Argentine cuisine. Take the Polanda fries: a portion of Italy from Argentina.
Here’s how to make them: Heat a splash of neutral oil in a pan. Remove the garlic from its jacket and chop roughly. Leave the fruit briefly along with the dried thyme leaves in a frying pan. Then add milk and water. Bring to a boil.
When it boils, add the polenta while stirring. Follow the instructions for this on the packaging. In the meantime, reduce the heat and stir constantly.
When it is done, tap the Parmesan cheese on top. Add butter and mix. Season with salt and pepper. Place the mixture on a baking paper-lined (oven) dish. Smooth it out with a spatula. Let it cool briefly, after which it may freeze further in the refrigerator.
Make tomato salsa
There is your own tomato salsa in a few steps. Peel an onion and chop finely. Puree the onion with the tomatoes and juice. Heat a little oil in a frying pan and fry the tomato mixture. Let it simmer well so the sauce is nice and sweet. Take the oregano and chop and add. Season the sauce with salt and pepper. So it went fast, didn’t it?
Argentine Meat Skaters – Brooches de Corns (1/2)
First make the herbal oil you use to coat the meat. To do this, you take the oregano and rosemary very finely and chop. Mix the herbs with oil and season with a pinch of salt and a twist of pepper.
Cut the meat into about 2 cm pieces. Do the same with the bacon. Season with both salt and pepper. Then you add the peppers and onions (peeled first) about 2 cm. Trim the meat and vegetables alternately on skewers. Coat them with a brush (rosemary) with herbal oil and let it soak briefly.
Argentina Spice Sauce – Simichuri
We will continue with the meat skiers first, and now first the Simichuri. This is a slightly sour, spicy dip to the meat. Peel a squash, grate it and squeeze the juice. Take the herb leaves and chop. You can cut parsley sprouts.
Mix all ingredients (cumin powder, smoked pepper, vinegar and oil) together. Season with salt and pepper flakes. If necessary, you can dilute the sauce in a splash of water.
Argentine Meat Skaters – Brooches de Corns (2/2)
It’s time to grill meat skewers. To do this, heat the grill pan or barbecue as you wish. Fry until well browned on all sides. Brush the meat again with the herb oil in between.
