I see Ubuntu as an easy/widely accessible Linux distro.

Exactly, there is something more for beginners and converters who do not want to delve into it further.

However, I find that if you want to keep up with the new distro every 6 months (or if you use the LTS version, less often) you have to install a major drawback. You often have to reinstall apps you installed yourself after upgrading, and I always had a lot of them (and I always had to get rid of a lot of them). Linux Mint advises against upgrading your system and always advises to perform a fresh install (and then you should always backup and restore your home folder). There is a function via Debian to instantly update your distro, but this does not appear to be 100% reliable in Ubuntu.

With the rolling version you don’t have that, although you may want to update very conservatively if you can’t stand downtime, for example because it’s your primary work computer. In this case, in addition to Gentoo and Arch, there are also some interesting options, such as Manjaro, EndeavorOS, Garuda Linux, GhostBSD, Funtoo, Source Mage, Calculate Linux …)
